    Prepare Home Fries

    Dice the potatoes and boil them until slightly tender. Drain and let cool slightly. Heat oil in a skillet over medium heat, add the potatoes, season with salt and black pepper, and cook until crispy and golden brown. Set aside.

    Cook Bacon

    In the same skillet, cook the bacon until crispy. Remove and drain on paper towels. Once cooled, chop into small pieces.

    Scramble Eggs

    In a bowl, whisk together the eggs with a pinch of salt and black pepper. Pour into the skillet and scramble them over medium heat until fully cooked.

    Assemble the Burrito

    On each tortilla, layer the crispy home fries, scrambled eggs, chopped bacon, cheddar cheese, a drizzle of smoked maple syrup, a dollop of sour cream, and green onions. Fold in the sides and roll tightly.

    Grill the Burrito

    Heat a clean skillet or grill over medium heat. Place the burritos seam side down on the skillet and grill for about 2-3 minutes on each side until golden brown and the cheese melts.

    Slice the burritos in half and serve with additional sour cream and Cosmik-seasoned home fries or Cosmik Fries on the side.
