Prepare the Potatoes

Peel and cut the russet potatoes into thin strips to make fries. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and dry the soaked potatoes, then fry in batches until golden brown and crispy, about 5-7 minutes per batch. Remove from oil and drain on paper towels. Season with salt, garlic powder, and paprika.

Cook the Steak

Season the ribeye steaks generously with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let the steaks rest for 5 minutes before slicing.

Plate and Serve

Slice the steaks against the grain and serve alongside the crispy fries. Garnish with fresh parsley.
