Preparation Steps
Cook the Pasta
In a large pot of salted boiling water, cook the shell pasta according to package instructions until al dente. Drain and set aside.
Sauté the Lobster
In a large skillet, melt the butter over medium heat. Add the lobster meat and sprinkle with Old Bay seasoning. Sauté for about 3-4 minutes until the lobster is cooked through. Remove from heat and set aside.
Make the Cheese Sauce
In a medium saucepan, melt 4 tablespoons of butter over medium heat. Stir in the flour and cook for about 2 minutes until golden. Gradually whisk in the milk, and continue to whisk until the mixture thickens, about 5-7 minutes. Remove from heat and stir in the cheddar cheese until melted and smooth. Season with salt and black pepper.
Combine Ingredients
In a large bowl, combine the cooked pasta, lobster mixture, and cheese sauce. Mix until well combined.
In a separate bowl, combine the panko breadcrumbs, grated parmesan, and a sprinkle of Old Bay seasoning. Mix well.
Assemble and Bake
Preheat the oven to 350°F (175°C). Transfer the lobster mac and cheese mixture to a greased baking dish. Sprinkle the breadcrumb mixture evenly over the top. Bake for 20-25 minutes until golden and bubbly.
Garnish and Serve
Remove from the oven and let cool slightly. Garnish with chopped scallions before serving.
