Peel and dice the Russet potatoes into small cubes. Heat olive oil in a large skillet over medium heat. Add the potatoes, season with salt and black pepper, and cook until crispy and golden brown, about 15-20 minutes, stirring occasionally.

In a small saucepan over low heat, melt the cheddar cheese until smooth. If too thick, add a splash of milk to reach desired consistency.
