    Prepare the Potatoes

    Dice the potatoes into small cubes. Rinse and soak them in cold water for about 30 minutes to remove excess starch. Drain and pat dry.

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the bacon fat in the skillet.

    Caramelize the Onions

    In the same skillet, add sliced onions to the bacon fat and cook over medium-low heat until caramelized, about 15-20 minutes. Add stout beer and cook until reduced, about 5 minutes.

    Fry the Potatoes

    Increase the heat to medium-high and add olive oil. Add the diced potatoes, season with salt and pepper, and cook until crispy and golden brown, about 10-15 minutes, stirring occasionally.

    Combine Ingredients

    Add the cooked bacon and caramelized onions to the skillet with potatoes. Stir well to combine and cook for another 2-3 minutes.

    In a separate pan, fry the eggs sunny side up to your preference.
