Cheesecake Filling
- 1
Prepare the Crust
In a medium bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from the oven and let cool.
- 2
Make the Cheesecake Filling
In a large mixing bowl, beat together the cream cheese and sugar until smooth and creamy. Add in the sour cream and vanilla extract, mixing until fully combined. Gradually add the eggs, one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
- 3
Add Cookie Dough
Fold in the cookie dough chunks gently into the cheesecake filling. Pour the filling over the cooled crust in the springform pan, spreading it evenly.
- 4
Bake the Cheesecake
Bake in the preheated oven at 325°F (163°C) for 55-60 minutes or until the center is set, but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.
- 5
Chill and Serve
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Once chilled, slice and serve with whipped cream or chocolate drizzle if desired.
