1. Prepare the Chicken
In a bowl, combine the boneless, skinless chicken breasts with ancho chili powder, olive oil, salt, and black pepper. Mix well to coat the chicken.
2. Cook the Chicken
Heat a skillet over medium heat and add the seasoned chicken. Cook for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for a few minutes before slicing it into strips.
3. Sauté the Vegetables
In the same skillet, add sliced bell pepper and onion. Sauté for about 3-4 minutes, or until they are tender.
4. Assemble the Quesadillas
On one half of each tortilla, layer the sliced chicken, sautéed vegetables, and shredded cheese. Fold the tortilla in half.
5. Cook the Quesadillas
In the skillet, add a little more olive oil if needed. Cook each quesadilla for about 3-4 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
6. Serve
Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
