Prepare the Mash
In a large pot, heat 5 gallons of water to approximately 165°F (74°C). Add the pale malt and caramel malt, stirring well to ensure all grains are submerged.

Mash at Target Temperature
Maintain the mash temperature at around 152°F (67°C) for 60 minutes. Stir occasionally to prevent clumping.

Sparge the Grains
After the mash, heat an additional 5 gallons of water to 170°F (77°C). Sparge the grains by rinsing them with the heated water to extract sugars.

Boil the Wort
Bring the collected wort to a boil. Once boiling, add 1 oz of Cascade hops and boil for 60 minutes.

Add Aroma Hops
During the last 15 minutes of the boil, add 0.5 oz of Amarillo hops to enhance the aroma.

Cool the Wort
After boiling, cool the wort as quickly as possible using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal and allow it to ferment at room temperature for 1-2 weeks.

Bottling
Once fermentation is complete, dissolve 3 oz of priming sugar in a small amount of boiling water. Add this to the fermented beer and bottle it in sanitized bottles.

Carbonation
Cap the bottles and let them carbonate at room temperature for another 1-2 weeks.

Chill and Enjoy
After carbonation, chill your bottles in the refrigerator, pour, and enjoy your light, clean, sessionable UK IPA!
