Brewing Process

Prepare the Ingredients

Gather all the ingredients and ensure that your brewing equipment is sanitized.

Mashing

In a large brew pot, heat 6 liters of water to 66°C (150°F). Add the Pilsner malt and Vienna malt, stirring to combine. Maintain this temperature for 60 minutes to allow the starches to convert to sugars.

Sparging

After mashing, sparge the grains with hot water (around 76°C / 170°F) until you collect around 10 liters of wort in your brew kettle.

Boiling

Bring the wort to a boil. Once boiling, add the hops and allow to boil for 60 minutes. At the end of the boil, add the candi sugar and stir until fully dissolved.

Cooling

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 22°C (72°F).

Fermentation

Transfer the cooled wort into a sanitized fermenter. Pitch the yeast according to the package instructions. Seal and store in a dark, cool place for 1-2 weeks.

Bottling

Once fermentation is complete, dissolve 3/4 cup of priming sugar in 2 cups of water and boil for 5 minutes to sanitize. Add this solution to your bottling bucket before siphoning the beer into bottles.

Carbonating

Cap the bottles and store them at room temperature for 1-2 weeks to carbonate. After carbonating, chill the bottles in the fridge before serving.
