Brewing Process

    Mashing

    In a large mash tun, combine the rolled oats, pale malt, crystal malt, chocolate malt, and roasted barley. Add 3 gallons of hot water (around 160°F) to the grains and stir well. Let the mixture rest for 60 minutes to allow for proper conversion of starches to sugars.

    Sparging

    After mashing, sparge the grain bed with an additional 2 gallons of hot water to rinse out the sugars. Collect the wort in a brew kettle.

    Boiling

    Bring the wort to a boil. Once boiling, add the East Kent Goldings hops and boil for 60 minutes. Stir occasionally to prevent scorching.

    Cooling

    After the boil is complete, cool the wort quickly using a wort chiller until it reaches approximately 70°F.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the English Ale yeast and seal the vessel with an airlock. Allow it to ferment in a dark, cool place for about 2 weeks.

Flavoring Process

    Flavor Addition

    Once fermentation is complete, split the vanilla beans lengthwise and scrape the seeds into the beer. Add the scraped seeds and the whole beans directly into the fermentation vessel. Pour in the bourbon and cocoa powder.

    Conditioning

    Let the beer condition with the added flavors for an additional week in the fermentation vessel.

    Bottling

    After conditioning, bottle the beer with priming sugar to carbonate. Allow the bottles to carbonate for 1-2 weeks at room temperature.
