    Prepare the Mash

    In a large pot, heat 10 cups of water to about 160°F (71°C). Add the Pale Malt and Crystal Malt, stirring well to avoid clumps. Maintain the temperature around 150°F (65°C) for 60 minutes.

    Sparging

    After 60 minutes, sparge the grains by rinsing them with an additional 170°F (77°C) water until you collect about 6 gallons of wort.

    Boil the Wort

    Bring the wort to a boil. Once boiling, add the Cascade Hops and continue to boil for 60 minutes.

    Add Citra Hops and Tangerine Zest

    With 15 minutes left in the boil, add the Citra Hops and the tangerine zest to the wort.

    Cool the Wort

    After the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Allow it to ferment for 1-2 weeks at a stable temperature of around 68°F (20°C).

    Bottling

    Once fermentation is complete, mix the priming sugar in 2 cups of boiling water until dissolved. Add this to the bottling bucket, then siphon the beer into bottles, leaving some headspace. Cap the bottles.

    Conditioning

    Let the bottles sit at room temperature for about 2 weeks for carbonation.

    After 2 weeks, chill the bottles in the refrigerator. Pour into a glass and enjoy your homemade Extra Pale Ale with a silky, tropical tangerine flavor!
