Prepare the Ingredients
Gather all ingredients and ensure they are at room temperature. Measure out the pumpkin puree, malts, hops, and spices accurately.

Mash the Grains
In a large brew kettle, heat 3 gallons of water to approximately 165°F (74°C). Add the crushed pale, crystal, and Munich malts to the water. Maintain the temperature around 152°F (67°C) for 60 minutes while stirring occasionally.

Sparging
After mashing, sparge the grains with 2 gallons of hot water (around 170°F or 77°C) to collect the wort. This should yield approximately 5 gallons of wort.

Boil the Wort
Bring the wort to a boil and add the bittering hops. Boil for 60 minutes while watching for boil-overs.

Add Pumpkin and Spices
With 15 minutes left in the boil, add the pumpkin puree and pumpkin pie spice to the wort. Stir well to combine.

Finish Boiling
After 60 minutes of boiling, turn off the heat and add the aroma hops. Allow the wort to cool as quickly as possible, ideally using a wort chiller.

Fermentation
Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal the fermenter with an airlock. Allow it to ferment at about 68-72°F (20-22°C) for 1-2 weeks.

Bottling
Once fermentation is complete, transfer the beer to a bottling bucket, adding priming sugar if desired for carbonation. Bottle the beer in sanitized bottles and cap them. Allow the bottles to condition for another 1-2 weeks.
