    Prepare the Mash

    In a large brew kettle, heat 6 gallons of water to about 165°F (74°C). Add the Pale Malt and Caramel Malt to the water, stirring to ensure all grains are submerged. The mash should stabilize at around 152°F (67°C). Maintain this temperature for 60 minutes.

    Sparging

    After the mash has completed, sparge the grains with additional hot water (around 170°F or 77°C) until you collect about 6.5 gallons of wort in the brew kettle.

    Boiling

    Bring the wort to a boil. Once boiling, add the Cascade Hops (bittering) and boil for 60 minutes. This will contribute to the bitterness of the beer.

    Flavor Addition

    After 30 minutes of boiling, add the Centennial Hops (flavor) for additional flavor complexity.

    Aroma Addition

    In the last 5 minutes of the boil, add the Cascade Hops (aroma) to impart aromatic qualities to the beer.

    Cooling the Wort

    Once the boiling is complete, cool the wort as quickly as possible using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Transfer the cooled wort into a sanitized fermentation vessel. Pitch the American Ale yeast into the wort. Seal the vessel and attach an airlock. Allow fermentation at a stable temperature (around 68-72°F or 20-22°C) for 1-2 weeks.

    Bottling

    Once fermentation is complete, prepare sanitized bottles and siphon the beer into them, leaving about an inch of headspace. Cap the bottles and allow them to carbonate at room temperature for 1-2 weeks.

    After carbonation, chill the bottles in the refrigerator and enjoy your homemade American IPA!
