Method

Mashing

  1. 1

    Malt Preparation

Start by crushing the Pale Malt, Crystal Malt, and Carapils Malt to prepare for mashing.

  2. 2

    Mashing Process

Heat 5 gallons of water to 165°F (74°C), then add the crushed grains. Maintain the temperature at 152°F (67°C) for 60 minutes, stirring occasionally.

  3. 3

    Sparging

After mashing, sparge the grains with 170°F (77°C) water to collect wort. Collect about 6.5 gallons of wort.

Boiling

  1. 4

    Boil the Wort

Bring the collected wort to a boil. Once boiling, add the Simcoe Hops and boil for 60 minutes.

  2. 5

    Adding Hops

With 15 minutes left, add the Citra Hops and Centennial Hops. At the end of the boil, add the Mosaic Hops.

Fermentation

  1. 6

    Cooling the Wort

After boiling, cool the wort quickly using a wort chiller until it reaches around 70°F (21°C).

  2. 7

    Pitching Yeast

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast. Seal the fermenter with an airlock.

Bottling

  1. 8

    Prepare Priming Sugar

Dissolve the priming sugar in 2 cups of boiling water and let it cool.

  2. 9

    Bottling Process

Add the cooled priming sugar solution to the fermenter and gently mix. Bottle the beer using sanitized bottles and caps.

  3. 10

    Carbonation

Store the bottles at room temperature for 1-2 weeks to allow carbonation.
