Mashing

Mash the Grains
In a large mash tun, combine 5 gallons of water at 165°F with the Pale Barley Malt, Crystal Malt, and Chocolate Malt. Stir thoroughly and allow to mash for 60 minutes at a temperature of 152°F.

Sparging
After mashing, sparge with enough hot water to collect 6.5 gallons of wort in the brew kettle.
Boiling

Boil the Wort
Bring the wort to a rolling boil. Once boiling, add the Bittering Hops and boil for 60 minutes.

Add Flavor and Aroma Hops
With 15 minutes left in the boil, add the Flavor Hops. At the end of the 60 minutes, add the Aroma Hops and turn off the heat.
Cooling and Fermentation

Cool the Wort
Use a wort chiller to cool the wort to about 70°F as quickly as possible.

Pitch the Yeast
Transfer the cooled wort to a sanitized fermenter and pitch the Ale Yeast. Seal the fermenter with an airlock.

Fermentation
Allow the beer to ferment at room temperature for about 2 weeks or until fermentation activity has ceased.

Prepare Priming Sugar
Dissolve the priming sugar in 2 cups of boiling water and let it cool.

Bottle the Beer
Siphon the beer from the fermenter into bottles, adding the priming sugar solution to each bottle. Cap each bottle securely.

Carbonation
Allow the bottles to carbonate at room temperature for 1-2 weeks before refrigeration.
