Method

Preparation

  1. 1

    Prepare the Chicken

Season the boneless, skinless chicken breasts with salt and black pepper on both sides.

  2. 2

    Cook the Chicken

In a skillet over medium heat, add 1 tablespoon of olive oil. Cook the chicken breasts for 6-7 minutes on each side until fully cooked and golden brown. Remove from skillet and let rest.

  3. 3

    Cook the Bacon

In the same skillet, add the bacon strips and cook until crispy. Remove and drain on paper towels.

  4. 4

    Caramelize the Onions

In the same skillet, add the remaining tablespoon of olive oil and the sliced onions. Cook over low heat for about 15 minutes, stirring occasionally, until onions are soft and caramelized.

Assembly

  1. 5

    Assemble the Sandwich

Slice the cooked chicken breasts in half horizontally. Place one half on the bottom of each burger bun. Layer with caramelized onions, crispy bacon strips, shredded cheddar, and mozzarella cheese.

  2. 6

    Add BBQ Sauce

Drizzle BBQ sauce over the cheese, and top with the other half of the burger bun.

  3. 7

    Grill the Sandwich

If desired, grill the assembled sandwich on a grill pan or sandwich press until the cheese melts and the bun is toasted, about 3-4 minutes.
