    Wash the Spinach

    Thoroughly wash the fresh spinach under cold running water to remove any dirt or grit. Drain and set aside.

    Prep the Vegetables

    Peel the garlic cloves and finely mince them. Peel the red onion and slice it thinly.

Cooking

    Heat the Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.

    Sauté the Onion and Garlic

    Add the sliced red onion to the skillet and sauté for about 3-4 minutes until the onion is translucent. Then add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the Spinach

    Gradually add the washed spinach to the skillet, stirring continuously. It may seem like a lot, but it will wilt down significantly.

    Season and Cook

    Once all the spinach is added, sprinkle with salt and black pepper. Continue to cook, stirring frequently, for about 2-3 minutes until the spinach is wilted and tender.

    Finish with Lemon Juice

    Remove the skillet from heat and drizzle the sautéed spinach with 1 tablespoon of lemon juice for brightness. Stir to combine.
