Spicy Ranchero Sauce

Method

Prepare the Spicy Ranchero Sauce

    Sauté the Aromatics

    In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then add minced garlic and jalapeño and cook for another 1-2 minutes until fragrant.

    Add Tomatoes and Spices

    Stir in the canned diced tomatoes, cumin, paprika, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.

Cook the Eggs

    Fry the Eggs

    In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook to your desired doneness (sunny-side up, over-easy, etc.), about 3-5 minutes.

Assemble the Breakfast Bowl

    Layer the Base

    In a bowl, add 1 cup of shredded raw cabbage as the base.

    Add Black Beans

    Top the cabbage with 1 cup of drained and rinsed black beans.

    Finish with Eggs and Sauce

    Place the cooked eggs on top of the beans and drizzle generously with the spicy ranchero sauce.
