    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until they begin to soften.

    Add Garlic and Carrots

    Stir in the minced garlic and grated carrots, and cook for an additional 2-3 minutes, until the garlic is fragrant and the carrots are tender.

    Add Mushrooms

    Add the chopped mushrooms to the skillet and cook for another 5 minutes, until they release their moisture and begin to brown.

    Mix in the Lentils and Tomato Sauce

    Stir in the cooked or canned lentils and the tomato sauce, mixing well to combine all ingredients.

Seasoning

    Add Seasonings

    Sprinkle in the brown sugar, Worcestershire sauce, mustard, smoked paprika, salt, and black pepper. Stir until everything is well combined and let it simmer for about 10-15 minutes. Adjust seasoning to taste.

Serving

    Assemble the Sloppy Joes

    Toast the whole grain burger buns if preferred. Spoon generous amounts of the Sloppy Joe mixture onto the bottom half of each bun. Top with pickles and garnish with fresh cilantro or parsley, then cover with the top half of the bun.

    Serve the Sloppy Joes warm with your choice of side dishes.
