Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the Russet potatoes into even-sized chunks, about 1-2 inches each.

    Boil the Potatoes

    Place the chopped potatoes in a large pot and cover them with water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain and Mash

    Drain the cooked potatoes in a colander and return them to the pot. Add butter, milk, salt, and black pepper. Use a potato masher or fork to mash until smooth and creamy. Adjust seasoning as needed.

Gravy

    Melt the Butter

    In a medium saucepan over medium heat, melt 4 tablespoons of butter.

    Make the Roux

    Once the butter is melted, whisk in the flour and cook for about 1-2 minutes, stirring constantly until the mixture is lightly golden and bubbling.

    Add the Broth

    Slowly whisk in the chicken or vegetable broth, ensuring there are no lumps. Continue to cook, stirring constantly, until the gravy thickens, about 5-7 minutes.

    Add salt, black pepper, garlic powder, and onion powder to the gravy. Taste and adjust the seasoning as necessary.
