Cheese Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Stir well and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until the grits are thick and creamy.

    Add Cheese and Butter

    Once cooked, remove from heat and stir in 1 cup of shredded cheddar cheese and 2 tablespoons of butter until melted and well combined.

Chili

    Cook the Ground Beef

    In a large skillet over medium heat, cook 1 lb of ground beef until browned. Drain excess fat.

    Add Vegetables and Spices

    Add 1 chopped onion and 2 minced garlic cloves to the skillet. Cook until onion is translucent, about 5 minutes. Stir in 1 can of diced tomatoes, 1 can of kidney beans, 2 tablespoons of chili powder, 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of pepper.

    Simmer the Chili

    Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20 minutes to allow the flavors to meld.

Eggs

    Cook the Eggs

    In a non-stick skillet, heat 1 tablespoon of butter or oil over medium heat. Crack 2 eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.), about 2-4 minutes.

Toast or Biscuit

    Prepare Toast

    Toast 2 slices of your favorite bread in a toaster or on a skillet until golden brown.
