For the Country Fried Steak

Prepare the Steak
Tenderize the beef sirloin steak using a meat mallet until about 1/2 inch thick.

Create the Breading
In a bowl, mix together the flour, salt, pepper, and paprika. In another bowl, whisk together the buttermilk and egg.

Bread the Steak
Dip each steak piece into the buttermilk mixture, allowing excess to drip off, then coat thoroughly with the flour mixture.

Fry the Steak
Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded steak pieces and fry for about 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.

In a mixing bowl, combine the flour, baking powder, baking soda, and salt.

Incorporate the Butter
Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Stir in the buttermilk until just combined. Do not overmix.

Bake the Biscuits
Preheat the oven to 425°F (220°C). Turn the dough onto a floured surface, pat it out to about 1 inch thick, and cut out rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Make the Buffalo Sauce
In a small saucepan over medium heat, combine the hot sauce and butter. Stir until the butter is melted and the sauce is well mixed.

Assemble the Hot Steak Biscuit
Split the baked biscuit in half, place a piece of the country fried steak on the bottom half, drizzle generously with the buffalo sauce, and top with pickles. Place the top half of the biscuit on and serve immediately.
