Pimento Cheese Preparation

    Make the Pimento Cheese

    In a large mixing bowl, combine the sharp cheddar cheese, cream cheese, and mayonnaise. Mix until smooth.

    Stir in the diced pimentos, garlic powder, onion powder, salt, and black pepper. Mix until evenly combined.

    Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Fried Green Tomatoes Preparation

    Prepare the Dredging Station

    Set up three shallow dishes: one with flour mixed with salt and pepper, one with buttermilk, and the last with cornmeal.

    Dredge the Tomatoes

    Dip each green tomato slice first in the flour, then in the buttermilk, and finally in the cornmeal, ensuring an even coating.

    Fry the Tomatoes

    In a large skillet, heat the oil over medium-high heat. Once hot, add the breaded tomato slices and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Bacon and Toast Preparation

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels.

    In the same skillet, reduce the heat to medium-low. Butter each slice of Texas toast on one side and place buttered side down in the skillet. Toast until golden brown, about 2-3 minutes per side.

Assembly

    On a slice of toasted Texas toast, spread a generous layer of the pimento cheese. Top with a fried green tomato, a slice of bacon, and another slice of toast. Repeat for remaining servings.
