Omelette Preparation

    Prepare the Vegetables

    Wash the spinach thoroughly and chop it coarsely. Slice the mushrooms and set aside. If you don't have roasted tomatoes, you can roast fresh tomatoes at 400°F (200°C) for 20-30 minutes until soft.

    Whisk the Eggs

    In a mixing bowl, crack the eggs and whisk them until the yolks and whites are combined. Season with salt and black pepper.

    Cook the Vegetables

    In a non-stick frying pan, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 3-4 minutes until they start to soften. Then, add the chopped spinach and roasted tomatoes, cooking for an additional 2-3 minutes until the spinach wilts.

    Add the Eggs

    Pour the beaten eggs over the sautéed vegetables in the pan. Tilt the pan to ensure the eggs evenly cover the vegetables. Let it cook undisturbed for about 2-3 minutes until the edges begin to set.

    Add Goat Cheese

    Crumble the goat cheese over one half of the omelette. Use a spatula to gently fold the other half over the cheese.

    Finish Cooking

    Continue to cook for another 2-3 minutes until the omelette is fully set and the cheese is melted. Slide the omelette onto a plate.

Toast Preparation

    Prepare the Toast

    In a separate pan, melt butter over medium heat. Add the slices of bread and toast them until golden brown on both sides.
