    Cook the Chorizo

    In a skillet over medium heat, add the chorizo. Cook until browned and fully cooked, about 5-7 minutes, breaking it apart with a spatula as it cooks.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together. In a separate pan, add a little oil or butter over medium heat. Pour in the eggs and scramble until they are just set, about 3-4 minutes. Remove from heat.

    Chop the Cilantro

    Rinse the cilantro under cold water, pat dry, and chop finely.

    Warm the Tortillas

    In a dry skillet or directly over a low flame, warm the corn tortillas for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    On each tortilla, add a portion of the cooked chorizo, followed by scrambled eggs. Top with a dollop of sour cream, a spoonful of pico de gallo, and a sprinkle of chopped cilantro.
