    Prepare the Potatoes

    Preheat your oven to 200°C (400°F). Wash the baby potatoes and halve them. In a mixing bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and black pepper.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes or until golden brown and tender.

    Cook the Steak

    While the potatoes are roasting, heat a skillet over medium-high heat. Season the New York strip steaks with salt and black pepper on both sides. Add 1 tablespoon of olive oil to the skillet.

    Sear the Steaks

    Once the oil is hot, place the steaks in the skillet and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove the steaks from the skillet and let them rest for a few minutes.

    Prepare the Vegetables

    In the same skillet, add the seasonal vegetables. Sauté them for about 5-7 minutes until they are tender but still crisp. Season with salt and pepper to taste.

    Fry the Onions

    Thinly slice the onions. In a separate pan, heat vegetable oil over medium heat. Dredge the onion slices in flour and fry until golden brown and crispy. Remove and drain on paper towels.

    Assemble the Dish

    On a plate, arrange the roasted baby potatoes, sautéed seasonal vegetables, and the rested New York steak. Drizzle demi-glace over the steak and top with crispy fried onions.
