1. Prepare the Fish
Cut the wild caught baja grouper into small, bite-sized cubes (about 1/2 inch).
2. Marinate the Fish
Place the cubed fish in a glass or ceramic bowl. Pour the fresh lime juice over the fish, ensuring it is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the fish to 'cook' in the lime juice.
3. Chop the Vegetables
While the fish is marinating, finely chop the red onion, fresh cilantro, jalapeño pepper (remove seeds for less heat), tomato, and cucumber.
4. Combine Ingredients
After 30 minutes, check if the fish has turned opaque. If so, drain a little of the lime juice, leaving some for flavor. Add the chopped vegetables (red onion, cilantro, jalapeño, tomato, cucumber) to the bowl and mix gently.
5. Season the Ceviche
Add salt and black pepper to taste. Mix well to ensure the seasoning is evenly distributed.
6. Serve with Avocado
Slice the avocado and place it on top of the ceviche when serving. You can also serve it with tortilla chips or on a bed of lettuce.
