Prepare the Seafood
Start by cleaning the wild Mexican shrimp. Remove the shells and devein them. Cut the shrimp into small pieces. For the Yucatan octopus, pre-cook it if it is raw; boil in salted water until tender, then cut into bite-sized pieces. Cut the grouper fillet into small cubes.

Mix the Seafood
In a large bowl, combine the shrimp, octopus, and grouper. Pour the fresh lime juice over the seafood to marinate. Make sure all pieces are well coated. Let it sit for 15-20 minutes until the seafood is 'cooked' by the acid.

Season the Ceviche
Add salt to taste to the ceviche mixture. Stir gently to combine all the ingredients evenly.

Serve
Dice the avocado and place it on top of the ceviche mix or serve it on the side. Serve chilled in small bowls as an appetizer or light meal.
