Prepare Potatoes
Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
Mix Ingredients
In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and black pepper. Mix until well combined.
Heat Oil
Heat vegetable oil in a large skillet over medium-high heat.
Form Pancakes
Using a tablespoon, scoop the potato mixture and form small pancakes. Carefully place them in the hot oil.
Cook Pancakes
Cook the pancakes for about 3-4 minutes on each side, or until golden brown and crispy. Remove from skillet and drain on paper towels.
Serve
Serve warm with apple sauce and sour cream on the side.
