Prepare the Hize Sauce
In a bowl, mix mayonnaise, ketchup, mustard, and hot sauce to create the Hize sauce. Adjust seasoning to taste and set aside.

Make the Patties
In a large bowl, combine the brisket and ground beef. Season with salt and pepper. Form into 4 equal patties.

Cook the Bacon
In a skillet over medium heat, cook the smoked bacon until crispy. Remove and let drain on paper towels.

Cook the Patties
In the same skillet, cook the beef patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness. Add a slice of American cheese on top of each patty during the last minute of cooking to melt.

Assemble the Burgers
Spread a generous amount of Hize sauce on the bottom half of each bun. Place the cheese-topped patty on top, followed by the crispy bacon, pickles, and sliced red onion. Top with the other half of the bun and serve.
