Prepare the Fried Shrimp
In a bowl, mix flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk the egg and buttermilk together. Dip the shrimp in the egg mixture, then coat with the flour mixture. Heat oil in a deep skillet over medium-high heat. Fry shrimp in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

Make the Slaw
In a large bowl, combine the cabbage, grated carrot, and rice vinegar. Toss well to combine. Set aside to let flavors meld.

Prepare Sriracha Mayo
In a small bowl, mix together the mayonnaise and sriracha until well combined.

Assemble the Shrimp Sandwich
On a serving plate, layer the fried shrimp, slaw, provolone cheese, and a drizzle of sriracha mayo. Top with chopped green onions and serve immediately.
