In a slow cooker, combine the pork shoulder, minced garlic, soy sauce, bourbon, and brown sugar. Cook on low for 8 hours or until the pork is tender and easily shreds.

While the pork is cooking, grill or char the jalapeños until the skin is blistered. Remove seeds if desired, then chop and set aside.

In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the eggs, milk, and melted butter. Combine wet and dry ingredients until just mixed.
