Method
Instructions
- 1
Prepare the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms. Knead on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

- 3
Roll Out the Dough
Divide the dough into four portions. Roll out one portion on a floured surface until thin (about 1/16 inch thick).
- 4
Fill the Ravioli
Place small spoonfuls of filling about 1 inch apart on one half of the rolled-out dough. Fold the other half over and press down to seal, ensuring to remove any air pockets. Use a pasta cutter to cut into individual ravioli.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

- 7
Serve
Toss the cooked ravioli with the basil pesto sauce and serve warm.
