Prepare the Cabbage Slaw
In a large bowl, combine shredded cabbage, carrot, minced jalapeño, lime juice, and salt. Toss well and set aside to marinate for at least 10 minutes.

Prepare the Shrimp
In a shallow dish, mix flour, cornstarch, salt, and pepper. In another dish, place beaten egg, and in a third dish, add panko breadcrumbs. Dip each shrimp first into the flour mixture, then into the egg, and finally coat with panko breadcrumbs.

Fry the Shrimp
Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded shrimp in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

In a small bowl, mix sour cream, minced jalapeño, and a pinch of salt. Stir well to combine.
