Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until fully incorporated.

Bake the cheesecake
Pour the cheesecake filling into the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Cool and chill
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight for best results.

Add the toppings
Before serving, top the chilled cheesecake with raspberry jam and sliced strawberries.
