Directions

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

  2. 2

    Prepare Egg Mixture

In a separate bowl, whisk the eggs and granulated sugar together until pale and frothy. Add the vanilla extract and a pinch of salt, and continue whisking until well combined.

  3. 3

    Combine Mixtures

Gently fold the melted chocolate mixture into the egg mixture until just combined, being careful not to deflate the mixture.

  4. 4

    Whip the Cream

In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate and egg mixture, being careful to maintain the light, airy texture.

  5. 5

    Chill the Mousse

Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

  6. 6

    Serve

Once set, serve chilled. Optionally, garnish with whipped cream, chocolate shavings, or fresh berries.
