    Prepare the Ingredients

    Chop the chicken into bite-sized pieces, peel and cube the potatoes, finely chop the onions, and dice the tomatoes.

Cooking

    Cook the Onions

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are golden brown, about 5-7 minutes.

    Add the Spices

    Add the cumin seeds, coriander powder, turmeric powder, red chili powder, and salt to the pot. Stir well and cook for 2 minutes to release the spices' flavors.

    Cook the Chicken

    Add the chicken pieces to the pot and cook until they are browned on all sides, about 5-7 minutes.

    Add Potatoes and Tomatoes

    Stir in the cubed potatoes and diced tomatoes. Mix well to combine all ingredients.

    Add Vinegar and Water

    Pour in the vinegar and water. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

    Simmer

    Let the vindaloo simmer for 30-40 minutes, or until the chicken is cooked through and the potatoes are tender. Stir occasionally and add more water if needed.

    Finish with Garam Masala

    Once cooked, sprinkle the garam masala over the vindaloo and stir to combine. Cook for another 5 minutes.
