Method

Preparation

  1. 1

Prepare the Nuts and Dried Fruits

Chop the pistachios, cashews, and almonds into small pieces and set aside. Rinse the raisins and set them aside as well.

  2. 2

    Soak the Saffron

In a small bowl, soak the saffron threads in 2 tablespoons of warm milk for about 10 minutes to release their color and flavor.

Cooking

  1. 3

    Cook the Vermicelli

In a large saucepan, bring the milk to a boil over medium heat. Add the vermicelli to the boiling milk and stir continuously to prevent it from sticking. Cook for about 5-7 minutes until the vermicelli is soft.

  2. 4

    Add Sweetness and Flavor

Once the vermicelli is cooked, stir in the sugar and the saffron-infused milk. Mix well and let it simmer for another 5 minutes, stirring occasionally.

  3. 5

    Incorporate Nuts and Raisins

Add the chopped pistachios, cashews, almonds, and raisins to the payasam. Stir well to combine and cook for an additional 2-3 minutes.

  4. 6

    Finish with Cardamom

Finally, add the cardamom powder, mix well, and remove from heat. Let the payasam rest for a few minutes before serving.
