Preparation

    Boil the Milk

    In a large pot, bring the full-fat milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.

    Add Saffron

    Once the milk begins to boil, add the saffron strands. Reduce the heat to low and let it simmer for about 10-15 minutes, allowing the saffron to infuse its color and flavor into the milk.

    Mix in Condensed Milk and Cream

    Stir in the condensed milk and heavy cream into the pot. Continue to simmer for another 10 minutes, stirring frequently.

    Sweeten the Mixture

    Add sugar to the mixture and stir well until it is fully dissolved. Remove from heat and allow the mixture to cool down to room temperature.

    Add Flavorings

    Once cooled, stir in the chopped pistachio nuts and rose water into the mixture.

Freezing

    Prepare the Kulfi Molds

    Pour the kulfi mixture into kulfi molds or small cups. Cover them with a lid or plastic wrap.

    Freeze the Kulfi

    Place the molds in the freezer and let them freeze for at least 6 hours, or until solid.

    Serve

    To serve, remove the kulfi from the molds by running them under warm water for a few seconds. Serve immediately and enjoy your Keshar Kulfi!
