Prepare the Filling

    Boil the Potatoes

    Peel and chop the potatoes into small cubes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and let cool.

    Sauté Onions and Spices

    In a pan, heat a tablespoon of oil over medium heat. Add cumin seeds and let them splutter. Then add finely chopped onion and ginger, and sauté until translucent.

    Mix the Vegetables

    Add the boiled potatoes, green peas, coriander powder, garam masala, turmeric powder, and salt. Mix well and cook for another 5 minutes. Stir in chopped cilantro and remove from heat.

Assemble the Samosas

    Prepare the Wrappers

    Lay a wonton wrapper on a clean surface. Place a spoonful of filling in the center.

    Fold and Seal

    Moisten the edges of the wrapper with water. Fold the wrapper diagonally to create a triangle. Press the edges to seal tightly.

Fry the Samosas

    Heat the Oil

    In a deep frying pan, heat oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Samosas

    Carefully drop the samosas into the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
