Preparation of Vegetables

    Chop the Vegetables

    Peel and finely chop the potato and carrot. Slice the onion thinly and chop the spinach. Remove the seeds from the green chili and chop it finely.

    Mix the Batter

    In a mixing bowl, combine the besan, rice flour, turmeric powder, cumin powder, red chili powder, and salt. Gradually add water to the dry ingredients while whisking to form a smooth batter. The batter should be thick enough to coat the vegetables.

    Mix Vegetables with Batter

    Add the chopped vegetables and green chili to the batter. Mix well until all the vegetables are coated evenly with the batter.

Frying

    Heat Oil

    In a deep frying pan, heat the vegetable oil over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; if it sizzles and rises to the surface, it is ready.

    Fry the Pakoras

    Carefully drop spoonfuls of the vegetable batter mixture into the hot oil. Fry in batches to avoid overcrowding. Fry until they turn golden brown and crispy, about 4-5 minutes. Use a slotted spoon to remove them and drain on paper towels.

Serving

    Serve Hot

    Serve the vegetable pakoras hot with green chutney or ketchup.
