    Rinse the Rice

    Thoroughly rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

    Prepare the Vegetables

    Wash, peel, and dice the carrots, potatoes, and chop the bell pepper and tomatoes. Cut the cauliflower into small florets. Set all vegetables aside.

    Chop the Aromatics

    Slice the onion and prepare the ginger-garlic paste if not using store-bought.

    Sauté the Aromatics

    In a large pot, heat the oil over medium heat. Add cumin seeds and let them splutter, then add the sliced onions. Sauté until the onions are golden brown.

    Add Ginger-Garlic Paste and Spices

    Stir in the ginger-garlic paste, turmeric powder, coriander powder, and biryani masala. Cook for 2-3 minutes until fragrant.

    Add the diced carrots, potatoes, cauliflower, green peas, and chopped bell pepper. Sauté for another 5 minutes until the vegetables are slightly tender.

    Pour in the rinsed basmati rice and water. Season with salt to taste. Stir gently to combine all ingredients.

    Cook the Biryani

    Increase the heat to high and bring the mixture to a boil. Once boiling, reduce heat to low, cover the pot, and let it cook for 20 minutes, or until the rice is fully cooked and water is absorbed.

    Turn off the heat and let the biryani rest for 5 minutes. Fluff the rice gently with a fork, then stir in the chopped coriander and mint leaves before serving.
