    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Gradually add water and knead until a smooth and elastic dough forms. Cover with a damp cloth and let it rest for 20 minutes.

Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine ground meat, chopped onion, chopped cabbage, grated ginger, chopped cilantro, soy sauce, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

    Make the Chutney Sauce

    In a blender, add the tomatoes, green chilies, garlic, lemon juice, and salt. Blend until smooth. Taste and adjust seasoning as necessary. Garnish with chopped cilantro.

Momo Assembly and Cooking

    Assemble the Momos

    Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle. Place a spoonful of filling in the center of each circle. Fold the dough over the filling and pinch to seal, forming a pleated shape.

    Steam the Momos

    Prepare a steamer by boiling water in the bottom pot. Place the momos in the steamer basket, making sure they’re not touching. Cover and steam for about 15-20 minutes until the dough becomes translucent and the filling is cooked through.
