Batter Preparation

Soak the Ingredients
In a large bowl, soak the rice, split urad dal, and fenugreek seeds in water for at least 4-6 hours or overnight.

Blend the Batter
After soaking, drain the water and transfer the rice, urad dal, and fenugreek seeds into a blender. Add 2 cups of fresh water and blend to a smooth batter. The consistency should be similar to pancake batter.

Ferment the Batter
Pour the batter into a large bowl, cover it, and let it ferment in a warm place for about 8-12 hours or until it has risen and has a slightly sour aroma.

Add Salt
Once fermented, add 1 tsp of salt to the batter and mix well.
Cooking Uttapam

Heat the Pan
Heat a non-stick skillet or tava over medium heat. Add 1 tbsp of oil and allow it to heat up.

Cook the Uttapam
Pour a ladleful of the prepared batter onto the skillet, spreading it into a thick circle. Sprinkle the topping mixture evenly over the batter.

Flip and Cook
Cook for 3-4 minutes until the bottom is golden brown. Drizzle a little more oil around the edges. Carefully flip the uttapam and cook for another 2-3 minutes until the other side is golden brown.

Serve
Remove the uttapam from the skillet and repeat the process with the remaining batter and toppings. Serve hot with coconut chutney or sambar.
