Soaking the Ingredients
In a large bowl, combine the rice, urad dal, and fenugreek seeds. Rinse them under cold water until the water runs clear. Soak the mixture in enough water for at least 6 hours or overnight.

Blending the Batter
After soaking, drain the water and transfer the mixture to a blender. Add about 2 cups of fresh water and blend until smooth and creamy. The batter should be of a pouring consistency.

Fermenting the Batter
Transfer the blended batter to a large bowl. Add the remaining water and salt, and mix well. Cover the bowl with a lid or cloth and let it ferment in a warm place for 8-12 hours, or until it has doubled in size and has a slightly sour smell.

Preparing the Pan
Heat a non-stick or cast-iron skillet over medium heat. Once hot, lightly grease the surface with a little oil or ghee.

Pouring the Batter
Stir the fermented batter well. Pour a ladleful of batter onto the center of the hot skillet and quickly spread it in a circular motion to form a thin, even layer.

Cooking the Dosa
Cook the dosa for about 2-3 minutes until the edges start to lift and the bottom turns golden brown. Drizzle a little oil or ghee around the edges and cook for another minute.

Serving the Dosa
Once cooked, carefully fold the dosa in half or roll it up. Serve hot with coconut chutney and sambar.
