Preparation

    Prepare the Paneer

    Cut the paneer into small cubes or rectangular pieces, about 1 inch in size. Set aside.

    Mix Dry Ingredients

    In a large bowl, combine the rice flour, cornstarch, chili powder, turmeric powder, garam masala, and salt. Mix well until all ingredients are evenly incorporated.

    Add Paneer and Coriander

    Add the paneer cubes and chopped coriander to the bowl with the dry mixture. If using, add chopped green chilies and lemon juice. Gently toss the mixture until the paneer is well coated with the spice mix.

Cooking

    Heat Oil

    In a deep frying pan or kadhai, heat the oil over medium heat. You can check if the oil is hot enough by dropping a small amount of the batter into the oil; it should sizzle and rise to the surface.

    Fry the Paneer Kurkure

    Carefully drop the coated paneer pieces into the hot oil in batches. Do not overcrowd the pan to ensure even cooking. Fry until the fritters are golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to remove them from the oil and drain on paper towels.
