Method

Preparing the Dough

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour and salt. Mix well.

  3. 3

    Combine Ingredients

Make a well in the center of the flour mixture. Pour in the activated yeast mixture, yogurt, and olive oil. Mix until a dough starts to form.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

  5. 5

    Let it Rise

Place the dough in a greased bowl, cover with a damp cloth, and allow it to rise in a warm place for 1-2 hours or until it doubles in size.

Preparing the Filling

  1. 6

    Chop the Onion

Finely chop the medium onion and set aside.

  2. 7

    Mix Filling Ingredients

In a bowl, combine the chopped onion, cilantro, salt, and black pepper. Mix well and set aside.

Assembling the Naan

  1. 8

    Divide the Dough

Once the dough has risen, punch it down and divide it into equal portions (about 6-8 balls).

  2. 9

    Roll Out the Dough

On a lightly floured surface, roll out each dough ball into a circle about 6-7 inches in diameter.

  3. 10

    Add Filling

Place a spoonful of the onion filling in the center of each rolled-out dough. Gather the edges and pinch to seal the filling inside.

  4. 11

    Roll Again

Gently roll the filled dough ball back into a circle, being careful not to let the filling escape.

Cooking the Naan

  1. 12

    Preheat the Pan

Heat a cast-iron skillet or non-stick pan over medium-high heat until hot.

  2. 13

    Cook the Naan

Place the rolled naan in the hot pan and cook for about 2-3 minutes or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.

  3. 14

    Add Toppings

Remove the naan from the pan, brush with ghee or butter, and sprinkle with nigella seeds if using.
