Method

Preparation of Vegetables

  1. 1

    Chop the Vegetables

Wash and chop the cucumbers, carrots, cauliflower, green bell pepper, and red onion into bite-sized pieces.

Spice Preparation

  1. 2

    Toast the Spices

In a dry skillet over medium heat, toast the mustard seeds and coriander seeds until fragrant, about 2-3 minutes. Remove from heat and let cool.

  2. 3

    Combine Spices

Once cooled, grind the toasted spices in a spice grinder or mortar and pestle, then mix with turmeric powder, red chili flakes, and salt.

Pickling Process

  1. 4

    Make the Pickling Liquid

In a saucepan, combine white vinegar, water, and sugar. Bring to a boil over medium heat, then remove from heat.

  2. 5

    Combine All Ingredients

In a large mixing bowl or a clean glass jar, combine the chopped vegetables, ground spices, and the hot pickling liquid. Stir well to ensure the vegetables are evenly coated.

  3. 6

    Cool and Refrigerate

Let the mixture cool to room temperature, then cover and refrigerate for at least 24 hours before serving for best flavor.
