    Prepare the Protein

    Cut the chicken breast into bite-sized pieces. Season with salt and black pepper. Set aside.

    Prepare the Vegetables

    Chop the onion, mince the garlic and ginger, and dice the mango. If using, slice the bell pepper.

Cooking the Curry

    Sauté the Aromatics

    In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.

    Cook the Chicken

    Add the seasoned chicken pieces to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.

    Add Spices and Mango

    Stir in the curry powder and turmeric. Cook for another minute to toast the spices. Add the diced mango and coconut milk, stirring to combine.

    Simmer the Curry

    Bring the mixture to a gentle simmer. If using, add the sliced bell pepper and peas. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the flavors meld.

    Remove from heat and stir in the chopped cilantro. Serve the mango curry hot over rice or with your favorite bread.
