Marinade
Method
Preparation
- 1
Prepare the Marinade
In a large mixing bowl, combine yogurt, heavy cream, ginger-garlic paste, garam masala, cumin powder, coriander powder, red chili powder, salt, and lemon juice. Whisk until smooth.
- 2
Add Chicken
Add the chicken pieces to the marinade. Ensure that each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- 3
Prepare for Grilling
Preheat your clay oven or grill to a medium-high temperature. If using a traditional clay oven, allow it to heat for about 30 minutes.
Cooking
- 4
Grill the Chicken
Remove the marinated chicken from the refrigerator. Place the chicken pieces on the grill or in the clay oven. Cook for about 25-30 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- 5
Baste with Butter
During the last 10 minutes of grilling, baste the chicken with melted butter for added flavor and moisture.
- 6
Check for Doneness
Ensure the internal temperature of the chicken reaches at least 75°C (165°F).
- 7
Garnish
Once cooked, remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped fresh coriander leaves before serving.
